Tim
Dale, Chief Operations Officer

For the better
part of three decades, Tim Dale
has been involved in the success
of some of San Francisco’s
most popular establishments. Some
of his past ventures include the
stylish jazz club and South of Market
restaurant Eleven (opened in 1992),
Fume (an upscale cigar bar and restaurant)
and Undici, a popular Southern Italian
restaurant largely recognized for
its outstanding design.
Previously,
Tim was a partner and general manager
of Eddie Jack’s, which revitalized
the now trendy SOMA district. Some
of San Francisco’s most successful
nightclubs have been launched by
Dale, including the DNA Lounge,
the Tap Room Bar, and the Up &
Down Club, which he later sold to
supermodel Christy Turlington. Prior
to moving to San Francisco, Tim
owned and operated Wolf Dale’s
(www.wolfdales.com)
at North Shore Lake Tahoe with his
brother Douglas. Along with his
wife Tara, Tim is also the founder
and owner of San Francisco’s
premier yoga studios, Yoga Tree
(www.yogatreesf.com),
which has several locations within
the city.
As
Tim commented when asked to oversee
the operation of Le Colonial, “The
heritage and grandeur of the restaurant
and its location make it the perfect
place for me to use my years of
experience to bring the property
to its full potential.” He
has been at the helm of Le Colonial
since 1999.
The
Dales live in San Francisco and
Glen Ellen (Sonoma County) with
their children Isabella and Antonio.
Joseph
Villanueva, Executive Chef

Le
Colonial’s Executive Chef
Joe Villanueva has been interested
in the culinary arts since childhood,
when he could often be found helping
his grandmother roll lumpia, cleaning
vegetables at family dinners or
spending Saturday mornings watching
Great Chefs and Jacques
Pepin’s Kitchen on KQED.
Chef Joe attended junior college
while working several non-food industry
jobs. A layoff from a corporate
job created an opportunity for Joe
to realign himself with his childhood
dreams. He decided to apply his
severance check towards tuition
at the California Culinary Academy.
Joe joined the Le Colonial family
in 2001 as a part-time food runner
during his training at CCA, and
has since rocketed to the position
of Executive Chef. Over the last
five years, he has worked his way
through the kitchen, mastering each
position while learning closely
from Chef Kelly Nguyen-Rabanit and
later, Chef Mike Yakura. Chef Joe
looks forward to combining knowledge,
creativity and authenticity into
a memorable Le Colonial San Francisco
experience.
